Silken Tofu With Grated Tomato and Umami Tahini

If you've never tried the ultimate umami match that is tomato with ginger, soy sauce and chili, then you need to try this dish. In less than 10 minutes you will have a delicious, protein packed plate that you can enjoy on its own or with a side of rice.

Ingredients

  • 1 x 300g box silken tofu
  • 15g toasted mixed nuts and seeds
  • 1 Tbsp crispy chilli oil
  • 1 spring onion
Grated Tomatoes
  • 600g tomatoes (2 x large beef tomatoes)
  • 1 Tsp Soy Sauce
  • 1 Tsp Olive Oil
  • Pinch of Flakey Sea Salt
Tahini Sauce
  • 2 Tbsp Tahini
  • 1 ½ Tbsp Soy sauce
  • 1 Tsp grated ginger
  • 1 Tsp maple syrup
  • 1 Tsp sesame oil

Instructions

  1. Cut the tomatoes in half and grate the flesh and juice on a box grater into a bowl. You will be left with just the skins, which you can discard. Add 1 tsp each of soy sauce and olive oil and a pinch of sea salt and give it a stir.
  2. To make the tahini sauce, mince the ginger, then whisk all of the ingredients together. Taste and adjust if needed.
  3. Carefully remove the silken tofu from the box and cut it into slices, about 1.5cm thick. Finely slice the spring onion.
  4. Add the grated tomato to a large, shallow bowl and top with the silken tofu slices. Drizzle over the tahini, crispy chili oil, toasted nuts and seeds and spring onion.
