Roasted Lime And Chili Olives

This is a perfect, easy starter or snack to place on the table while you're waiting for dinner to be ready or to enjoy with a little drink. All of the flavours meld together and soften enough to make them perfect to squish onto crusty bread.
Ingredients
- 350g Mixed Olives
- 1 Shallot
- 1 Chilli
- 1 Lime
- 4-5 Garlic Cloves
- 2-3 Sprigs Of Fresh Thyme
- Olive oil
- Vegan Buratta (optional)
- Bread, to serve
Instructions
- Preheat the oven to 180C, fan.
- Peel and cut the shallot into eighths. Peel the garlic and cut the chilli in half, then scoop out the seeds. Slice the lime into rounds.
- Place the olives, shallow, chilli, garlic and thyme into a small to medium baking dish and top with the lime slices. Drizzle over plenty of olive oil and roast for about 20 mins, tossing halfway, until the shallots and garlic have softened and all of the flavours have combined.
- Remove from the oven and top with vegan burrata, if using. Scoop up the flavoured olives with crusty bread.
